Alex Kaplan

On a Mission to Make Healthy Exciting

Hi, I’m Alex Kaplan—a Registered Dietitian and graduate from Tufts University with a Master’s in Nutrition Communications and Public Health. I’m passionate about making nutrition approachable, exciting, and grounded in science. When I’m not working on food innovation or health communication, you can find me hiking a new trail, snowboarding, or testing veggie-forward recipes in the kitchen. Fun fact: I once created a frozen dessert inspired by the Blue Zones—because who says longevity can’t taste good?

About Me.

I have a passion for nutrition communication, consumer behavior, and making healthy food more exciting and accessible. I recently earned my Master’s in Nutrition and Public Health from Tufts University, where I focused on how food systems, product strategy, and behavior change intersect to shape what—and how—we eat.

This site is a space where I bring together the full picture of my work—from industry-focused food product concepts to public health initiatives and clinical case studies. Whether I’m developing marketing campaigns, evaluating functional ingredients, or translating research into consumer-friendly messaging, my goal is the same: to help people connect with food in a way that feels both empowering and enjoyable.

I believe that great nutrition shouldn’t be complicated or boring—and that science, storytelling, and a little creativity can go a long way in transforming how we think about food.

Education

2023-2025

MS/MPH Concentrating in Nutrition Communications and Population Health Promotion 

Tufts University

I earned my Master of Science in Nutrition and Public Health from Tufts University, where I focused on nutrition interventions, consumer behavior, and food systems. Through coursework and hands-on projects, I gained skills in qualitative and quantitative research, health communication, product strategy, and policy analysis. Highlights of my time at Tufts include conducting a qualitative study on grocery purchasing behavior, developing a functional food product aimed at improving micronutrient intake, and contributing to research at ChildObesity180 focused on increasing physical activity in school-aged children. My education equipped me to bridge the gap between public health goals and real-world food solutions.

2022-2023

Dietetic Internship

Cedars Sinai Medical Center

I completed my ACEND-accredited Dietetic Internship at Cedars-Sinai Medical Center in Los Angeles, gaining over 1,200 hours of supervised practice across clinical, foodservice, and community rotations. My clinical training focused on complex medical nutrition therapy in intensive care, cardiology, and surgical units, where I developed skills in nutrition assessment, enteral and parenteral nutrition, and interdisciplinary care planning. Highlights included managing TPN in critically ill patients, presenting evidence-based care recommendations, and authoring a clinical case study on nutrition support in surgical complications. This experience strengthened my ability to apply clinical judgment, communicate effectively with care teams, and tailor nutrition interventions to high-acuity patients.

2018-2022

BS in Dietetics

University of California Berkeley

At UC Berkeley, I earned my Bachelor of Science in Nutritional Science–Dietetics while gaining hands-on experience across food, tech, and education. I worked as a nutrition analyst at Heali, a personalized nutrition app, where I annotated hundreds of ingredients for nutrition and regulatory compliance, reviewed nutrition data using credible sources, and created evidence-based content for a wide range of topics. I also gained culinary experience in the Hillel Kitchen, preparing meals for large groups while supporting food safety and dietary accommodations. As an undergraduate reader for the popular “Food, Culture, and the Environment” course, I deepened my understanding of the social and cultural dimensions of food systems and supported students in their learning. These experiences sparked my interest in nutrition communication and helped shape my multidisciplinary approach to dietetics.
